Welcome to the Salty Trencherman. Why the stupid name?

  1. I’m salty.
  2. A number of my posts have to do with salting, curing, and brining.
  3. trencherman (n.): a person who eats heartily.
  4. You try finding an available URL on WordPress in 2016 and tell me how it goes.

I like to cook, but I especially love to smoke and cure meats. It makes me a little emotional even. (My buddy Jay calls it “meat prep joy.”) So that’s what you’ll find here.
